Tuscan White Bean Stew

Ingredients
- 1 can chicken broth (14 1/2 ounce)
- 2 cups carrots, shredded
- 2 cans cannellini beans, drained and rinsed (15 1/2 ounces)
- 3 cups cooked turkey, cubed
- 3/4 teaspoon dried Italian seasoning
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon parsley, chopped
- Crusty bread
Directions

Bring chicken broth to a simmer in a large saucepan. Add carrots and one can of the beans; mash second can of beans and add to saucepan.

Stir in turkey and Italian seasoning. Cover and simmer 5 minutes. Stir in Parmesan and parsley. Serve with crusty bread, if desired.
