Tuscan White Bean Stew

Spice up leftovers by keeping the pantry stocked with condiments like soy, hoisin, and stir-fry sauces, as well as mustard and salsa.

Ingredients

  • 1 can chicken broth (14 1/2 ounce)
  • 2 cups carrots, shredded
  • 2 cans cannellini beans, drained and rinsed (15 1/2 ounces)
  • 3 cups cooked turkey, cubed
  • 3/4 teaspoon dried Italian seasoning
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon parsley, chopped
  • Crusty bread

Directions

  1. Bring chicken broth to a simmer in a large saucepan. Add carrots and one can of the beans; mash second can of beans and add to saucepan.

  2. Stir in turkey and Italian seasoning. Cover and simmer 5 minutes. Stir in Parmesan and parsley. Serve with crusty bread, if desired.
