Sausage and Cheese Pancakes

Ingredients

  • 1 large egg
  • 1 c. plain yogurt
  • 1/4 c. heavy cream
  • 2 Tbs. vegetable oil
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. all-purpose flour (pack it down in cup when you measure it)
  • 1/2 c. fried breakfast sausage, broken into pieces I used bulk Bob Evans, my fave
  • 1 c. sharp cheddar cheese, shredded

Directions

  1. Beat the egg with a wire whisk in medium bowl until fluffy.

  2. Whisk in yogurt, cream and vegetable oil.

  3. In a small bowl, combine baking powder, baking soda, and salt with the flour. Stir it around with a fork until it’s evenly distributed.

  4. Add dry ingredients to wet and stir well. Add sausage and cheese to your batter and stir thoroughly.

  5. Bake as you would normal pancakes on your favorite pancake making surface.
