Cranberry Quinoa Salad

Ingredients

  • * 1 cup quinoa
  • * 2 cups water
  • * 11/2 cups whole cranberries
  • * 4 TB fresh lime juice
  • * 4 TB honey
  • * 1 TB lemongrass, minced
  • * 1 tsp garlic, minced
  • * 11/2 tsp serrano peppers, seeded, minced
  • * 1 TB mint, minced
  • * 1 TB cilantro, minced
  • * 1/4 cup red onion, minced

Directions

  1. Rinse quinoa several times. Bring water and quinoa to boil, simmer 20 minutes or until all liquid is absorbed. Combine 2 TB honey, lemongrass, garlic and peppers, and add to quinoa. Chop cranberries with 2 TB honey and lime juice in food processor or blender; combine with quinoa. Add mint, cilantro and red onion, mix thoroughly and serve chilled.
