Wassail

Ingredients

  • Dried apple slices
  • Colored sugar
  • 3/4 c water
  • 3/4 c granulated sugar
  • 1/2 t ground ginger
  • 1/4 t ground nutmeg
  • 1 small cinnamon stick
  • 3 whole cloves
  • 3 whole allspice
  • 3 coriander seeds
  • 3 cardamom seeds
  • 3 c ale or wine
  • 2 1/4 c dry sherry
  • 1/3 c cognac

Directions

  1. Using tiny cookie cutters or sharp knife, cut dried apple slices into festive shapes, moisten with water and coat with colored sugar, set aside

  2. combine 3/4 c water granulated sugar, and spices in large saucepan, bring to a boil. Cover, reduce heat and simmer 5 min.

  3. Stir in ale, sherry and cognac. Heat just to simmering. Do not boil. Strain into heatproof punch bowl. Float apple slices in punch.
