Fresh Corn Salad

Ingredients
- 5 ears Corn, shucked
- 1/2c small-diced red onion
- 3TB Cider Vinegar
- 3TB Olive Oil
- 1/2tsp Kosher Salt
- 1/2tsp fresh ground Black Pepper
- 1/2c julienned fresh Basil Leaves
Directions

Cook corn for 3 minutes in boiling water.

Drain and immerse in ice water to stop cooking. When corn is cool, cut the kernels off the cob.

Toss kernels in a large bowl with onion, vinegar, olive oil, salt, and pepper.

Just before serving, toss in fresh basil.
