Fresh Corn Salad

Ingredients

  • 5 ears Corn, shucked
  • 1/2c small-diced red onion
  • 3TB Cider Vinegar
  • 3TB Olive Oil
  • 1/2tsp Kosher Salt
  • 1/2tsp fresh ground Black Pepper
  • 1/2c julienned fresh Basil Leaves

Directions

  1. Cook corn for 3 minutes in boiling water.

  2. Drain and immerse in ice water to stop cooking. When corn is cool, cut the kernels off the cob.

  3. Toss kernels in a large bowl with onion, vinegar, olive oil, salt, and pepper.

  4. Just before serving, toss in fresh basil.
