Strawberry Flip Cookies

Can also make with raspberry jam and whole fresh raspberries on top.

Ingredients

  • 1 cup melted butter
  • 1 cup sugar
  • 2 beaten eggs
  • 1/3 cup seedless strawberry jam
  • 1 tsp strawberry extract (or vanilla)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 cups flour
  • small bowl of powdered sugar
  • strawberries

Directions

  1. Melt butter and add sugar. Then add eggs and jam. When jam is fully incorporated, add the extract, baking powder, soda, and salt. Then add the flour and mix well.

  2. Chill dough then roll balls about the size of unshelled walnuts. Roll balls in the powdered sugar and place on a greased cookie sheet (12 to a sheet) – Make a deep thumbprint in the center of each cookie

  3. Cut strawberries in half lengthwise and place each half skip side up in the thumbprint on each cookie

  4. Bake at 375 for 10 to 12 minutes. Cool on cookie sheet for 2 minutes, then transfer to wire rack. Dust cookies with powdered sugar and place on a pretty plate (optional) before serving.
