Chicken Carbonara

Serves 5 people

Ingredients

  • 1 1/2 lb chicken, cubed
  • 2 tbsp parsley
  • 2 tbsp oil
  • 4-6 eggs, beaten
  • 1/2 cup grated parmesan cheese
  • 2 tbsp milk or heavy cream
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 8-10 slices bacon, cooked and crumbled

Directions

  1. In a large skillet, saute chicken in oil over medium heat until cooked through.

  2. Add crumbled bacon.

  3. Comine eggs, cheese, milk or cream, parsley, salt, and pepper.

  4. Pour over chicken.

  5. Cook and stir over low heat until eggs have a scrambled texture.
