Creamy Ham and “Potato” Casserole

Ingredients
- 2 lb frozen cauliflower
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/2 onion, chopped
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 oz shredded cheddar cheese
- 2 cups chopped ham
- paprika
Directions

Cook cauliflower until very tender; drain and coarsely chop

Blend together cream cheese, sour cream, salt, pepper, and shredded cheese

Stir in cauliflower and ham

Transfer to a greased 2-1/2 qt dish

Sprinkle with paprika

Cover and bake at 350 for 30 min; uncover and bake 20 min more until brown and bubbly
