Healthy Banana Blueberry Muffins

Easy healthy muffin recipe, you can substitute wholemeal flour for plain flour if desired.

Ingredients
- 2 Bananas mashed
- 1 egg
- 1/2 cup (125ml) water
- 125ml of vegetable oil
- 2 cups of wholemeal flour
- 1 teaspoon of bi-carb soda
- 2 1/4 teaspoon of baking powder
- 1 tablespoon of honey
- 1 cup frozen blueberries
Directions

Pre-heat oven to 180degrees c. Grease or line a 12 muffin cup tray.

Mix together the mashed bananas, egg, water and oil in a large bowl. Mix in flour, bi-carb soda and baking powder until mostly smooth (a few lumps from the banana are ok). Mix in honey then gently fold in the blueberries.

Bake in pre-heated oven for 15mins or until golden. Remove from muffin tin and allow to cool for 5minutes.
