Mexicali Meatloaf

Ingredients
- 1 lb ground beef
- 1 lb pork sausage
- 1 cup pork rinds, crushed (about 2.5 oz)
- 2 cups shredded Monterrey Jack cheese
- 3/4 cup salsa
- 1 egg
- 1 tsp minced garlic
- 2 tsp oregano
- 2 tsp cumin
- 1 tsp salt
- 2 tbsp minced onion

Combine all ingredients in a large bowl

Using clean hands, knead mixture until thoroughly blended

Form into a loaf, 3 inches thick, on a broiler pan

Bake at 350 for 1 hour 20 min
