Paprika herb omelette

Ingredients
- 3 fresh free-range eggs
- large pinch paprika
- small knob butter
- small handful mixed chopped fresh herbs such as parsley, chives and basil
Directions

Put the eggs and paprika into a bowl and lightly whisk to combine. Season with some sea salt and black pepper.

Put the butter in a 20cm non-stick frying pan over a medium-high heat. When the butter starts to foam, add the egg mixture. As the base begins to cook, use a fork to draw it aside and allow the uncooked egg to run beneath. Continue doing this until the omelette is set but still soft.

Scatter the herbs on top. Use a palette knife to fold over one half of the omelette, then carefully slide onto a serving plate. Serve with bread and a dressed green salad.
