Ingredients
- 2 cup butter, melted
- 1/4 cup instant coffee powder
- 2 tsp vanilla extract
- 2 tsp brandy extract, or rum extract
- 3 cup white sugar
- 3 eggs, lightly beaten
- 2 tsp baking soda
- 1 tsp baking powder
- 3 cup milk chocolate chips
- 5 1/2 cup all-purpose flour, unsifted, packed
Directions

Melt butter in a large microwave-safe bowl at 3 minutes on High, or melt in a saucepan over low heat on the stovetop. Add instant coffee powder, vanilla, and rum or brandy extract; stir until coffee powder has dissolved.

Add sugar, beaten eggs, baking soda, and baking powder; mix well. Stir in milk chocolate chips; mix well.

Add flour in 1 cup increments, stirring after each addition, mixing until flour is thoroughly incorporated.

Form dough into walnut-sized ball; roll them in a small bowl with granulated sugar if you want them sweeter.

Place on greased cookie sheets, 12 to a standard-size sheet. Flatten balls with the back of a metal spatula, or with the palm of your hand.

Bake the cookies @ 350 degrees for 9-11 minutes. Let cool on the cookie sheets for 2 minutes; transfer the cookies to a wire rack to complete cooling.
