Buttermilk Oven Fried Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1/3 cup all purpose flour
  • 1/3 cup corn flake crumbs
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 Tbsp. butter

Directions

  1. Pre-heat oven to 425 degrees

  2. Combine buttermilk and chicken in a shallow dish, turning to coat

  3. Combine flour and cornflake crumbs in another shallow dish. Move chicken to work surface. One breast at a time, sprinkle with salt and pepper and dredge in cornflake mixture.

  4. Melt butter in large oven proof skillet over medium high heat. Add chicken to skillet. Cook until golden brown. Turn chicken over, and bake at 425 for 32 minutes, or until chicken is cooked through center.
