Salmon Burgers

Ingredients

  • 1 can of salmon (16 oz)
  • 2 eggs
  • 1/4 c. fresh parsley chopped fine
  • 2 TBSP fresh basil chopped fine
  • 2 TBSP lemon juice
  • 1 TBSP EVO
  • pinch of red pepper flakes
  • 1/4 c. breadcrumbs
  • Dressing:
  • 2 TBSP mayo
  • 1 TBSP fresh basil finely chopped
  • 1 TBSP fresh lemon juice

Directions

  1. Mix ingredients except EVO. Form into 5-6 patties. Heat EVO on skillet over medium heat. Add patties and cook 4 minutes each side until nicely brown.

  2. Serve with Mayo Basil dressing.
