Ingredients
- 3 cups rice, cooked
- ⅔ cup raisins
- 2-1/2 cups milk
- 1 cup sugar
- 2 t vanilla
- 2 t grated lemon peel
- 1/4 t salt
- 6 eggs, beaten lightly
- 1/2 t nutmeg
- 1/2 t cinnamon
- ⅛ t cardomom

Combine rice, raisins, half the milk, sugar, vanilla, lemon peel and salt in a large mixing bowl. In a separate smaller bowl beat together remaining milk, eggs and spices. Blend milk mixture into rice mixture. Pour into a buttered 2 qt. baking dish. Sprinkle top with cinnamon. Bake in 350F. oven 40 to 45 minutes until knife inserted in center comes out clean.
