Coconut Cake

Ingredients

  • 2-1/2 cups sifted Swan's Down Cake Flour
  • 1-1/2 C sugar
  • 3 t baking powder
  • 1 t salt
  • 1/2 C shortening
  • 1 C milk
  • 3 egg whites (unbeaten)
  • 1-1/2 t vanilla
  • 1/4 t almond extract

Directions

  1. Place sifted flour in sifter; add sugar, baking powder and salt. Stir shortening in bowl to soften. Sift in dry ingredients. Add 3/4 C milk. Beat 2 min. at medium speed. Add whites, flavorings and rest of milk. Beat 1 minute more. Bake in 2-9” pans lined with paper. Bake at 350 for 25-30 minutes. Cool. Frost with 7-min. icing.
