Edamame Pesto

Ingredients

  • 1 cup of fresh basil leaves
  • 1/2 cup edamame, shelled and defrosted
  • 5 cloves of roasted garlic
  • 1/4 cup of olive oil
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp of sea salt (or to taste)
  • 1 tsp of pepper (or to taste)
  • 1 Tbsp of lemon juice

Directions

  1. Roast the garlic. Slice off the top of the head of garlic, lightly cover the top of the garlic with olive oil and salt. Place on a baking sheet lined with aluminum foil. Bake at 350* for 20-25 minutes.

  2. Add the basil, edamame, garlic, olive oil, lemon juice, cheese, and salt and pepper to a food processor and blend until a paste consistency is formed.

  3. Serve with whole wheat bread, pasta, fish, or as a dip for vegetables.
