Ingredients
- 1 cup of fresh basil leaves
- 1/2 cup edamame, shelled and defrosted
- 5 cloves of roasted garlic
- 1/4 cup of olive oil
- 1/2 cup shredded Parmesan cheese
- 1 tsp of sea salt (or to taste)
- 1 tsp of pepper (or to taste)
- 1 Tbsp of lemon juice

Roast the garlic. Slice off the top of the head of garlic, lightly cover the top of the garlic with olive oil and salt. Place on a baking sheet lined with aluminum foil. Bake at 350* for 20-25 minutes.

Add the basil, edamame, garlic, olive oil, lemon juice, cheese, and salt and pepper to a food processor and blend until a paste consistency is formed.

Serve with whole wheat bread, pasta, fish, or as a dip for vegetables.
