Moroccan Chicken Casserole

Ingredients

  • 2-3 lbs chicken (chicken breast)
  • 1 head cauliflower
  • 2 Tbsp butter
  • 1 onion, finely chopped
  • 2 Tbsp ginger root, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 carrots, peeled, chopped
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne
  • 1 red bell pepper, cut into strips
  • 28 oz can diced tomatoes
  • 1/2 cup minced parsley
  • 2 tsp salt
  • 1 lemon

Directions

  1. Preheat oven to 375*

  2. Grate cauliflower into rice-sized pieces

  3. Melt 1 Tbsp butter in deep pan and brown chicken (salt and peppered), 3-5 min on each side, remove.

  4. Add 1 Tbsp butter to pan and add everything else (except cauliflower), return chicken to pan and let simmer 3-5 min.

  5. Put cauliflower on bottom on 9×13 casserole dish, then add chicken mix. Mix well to cover completely, add lemon slices, cover with foil.

  6. Bake 35 min with foil. Remove foil and back additional 25 min. Garnish with parsley before serving.
