Chicken Paillards with Herb-Tomato Salad

Ingredients
- 1 ripe medium tomato
- 1 clove garlic, peeled and smashed
- 1/2 scallion thinly sliced
- 1 1/2 tablespoons extra-virgin olive oil
- 1 teaspoon red wine vinegar
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1/6 cup torn fresh basil
- 1 1/2 tablespoons fresh tarragon
- 1 1/2 tablespoons fresh flat-leaf parsley
- 2 chicken paillards, about 6 ounces each
Directions

Prepare a grill or grill pan on high heat.

tomatoes, garlic, scallion, the 1.5 tablespoons olive oil, vinegar, the 1 teaspoons salt, and black pepper to taste in a medium bowl.

Add herbs to bowl without tossing.

Brush chicken with olive oil, salt, and pepper.

Grill chicken for about 2 minutes each side.

Stir herbs into salad and place on chicken.
