Tomato Pepper Pasta

Ingredients

  • 1/2 cup green onion, chopped
  • 1/2 tsp garlic, minced
  • 1 Tbsp. olive oil
  • 1 red bell pepper, thinly sliced
  • 2 cups tomatoes, diced
  • 4 cup Parmesan cheese, grated
  • 1 Tbsp parsley, chopped
  • 4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 3 oz. spaghetti or linguine, dry

Directions

  1. Saute onions and garlic in oil until soft.

  2. Add red bell pepper and saute until tender-crisp, about 2 minutes.

  3. Stir in tomato and cook over high heat until juices evaporate.

  4. Stir in cheese and next three ingredients, reserve.

  5. Cook pasta and drain well. Toss hot pasta with reserved tomato mixture.
