Italian Baked Cod

Ingredients
- 1/4 cup onion, chopped
- 1/2 Tbsp black olives, sliced
- 1/2 tsp garlic, minced
- 1/2 tsp basil
- 1/2 Tbsp olive oil
- 6 oz cod fillets
- 1 can (14 oz) tomatoes, diced
Directions

Preheat oven to 450° F.

Sauté onions and garlic in oil.

Add tomatoes, olives, and basil.

Simmer until thickened, about 10 minutes.

Place in non-stick baking dish. Top with cod fillets.

Bake covered about 10 minutes until fish flakes easily.

Serve.
