Sweet and Sour Vegetables

Ingredients

  • 1 tsp honey
  • 1 tsp lemon juice
  • 1/3 tsp soy sauce, low-sodium
  • 1/8 tsp ginger
  • 1/3 cup (8 oz) 100% pineapple or orange juice
  • 1 Tbsp cornstarch
  • 2/3 tsp olive oil
  • 1/3 lb bag frozen stir-fry vegetables

Directions

  1. Combine all ingredients except vegetables in bowl.

  2. Mix and set aside.

  3. Heat oil in skillet and add frozen vegetables.

  4. Cook for 3-4 minutes or until vegetables are crisp-tender.

  5. Add sweet and sour sauce and cook for another 2 minutes or until mixture comes to a boil.

  6. Serve.
