Sweet and Sour Vegetables

Ingredients
- 1 tsp honey
- 1 tsp lemon juice
- 1/3 tsp soy sauce, low-sodium
- 1/8 tsp ginger
- 1/3 cup (8 oz) 100% pineapple or orange juice
- 1 Tbsp cornstarch
- 2/3 tsp olive oil
- 1/3 lb bag frozen stir-fry vegetables
Directions

Combine all ingredients except vegetables in bowl.

Mix and set aside.

Heat oil in skillet and add frozen vegetables.

Cook for 3-4 minutes or until vegetables are crisp-tender.

Add sweet and sour sauce and cook for another 2 minutes or until mixture comes to a boil.
