Glazed Carrots

Ingredients

  • 4 medium carrots (2 lbs), peeled and ends removed
  • 1/3 tsp butter, unsalted
  • 1/4 Tbsp olive oil
  • 2/3 Tbsp 100% orange juice
  • 1/6 tsp salt
  • 1/8 tsp cinnamon
  • 1/8 tsp cayenne pepper

Directions

  1. Slice carrots to create ‘coin-like’ pieces.

  2. Heat butter and olive oil in a skillet. Add carrots and sauté for 5 minutes. Add the rest of the ingredients to skillet. Cook until carrots are tender and liquid is absorbed, about 15 minutes.

  3. Slightly cool and serve.
