Blue Crab Beignets

Ingredients

  • vegetable oil
  • 1 cup all-purpose flour
  • 1 1/4 Tbsp cornstarch
  • 1 Tbsp baking powder
  • 1 cup amber lager
  • 5 oz fresh lump blue crab
  • 3 oz mascarpone
  • 1 Tbsp minced shallots
  • 1 Tbsp snipped chives
  • 1 tsp salt

Directions

  1. Fill a pot with flour inches of vegetable oil and heat to 375*. In a bowl, combine dry ingredients until well mixed. Add the beer and whisk until batter is slightly thicker than pancake batter.

  2. Combine ingredients in another bowl and stir until well mixed. One at a time, drop half spoonfuls of the filling in the batter and coat completely. Gently drop batches of flour onto the oil and cook until crisp and golden brown, about 3-4 minutes. Serve immediately.
