Danish Potato Salad

Ingredients

  • 3 lbs medium yukon gold potatoes
  • 1/2 cup finely chopped chives or green onion tops
  • 1/2 cup chopped fresh parsley
  • 2 tbs drained capers
  • 3 tbs white wine vinegar
  • 1 tbs caper liquid from jar
  • 1 tsb dijon or coarse-grained mustard
  • 1/2 cup EVOO

Directions

  1. Cook potatoes in large pot of boiling salted water, until tender. drain and cool 30 minutes. Peel potatoes if desired, and cut into 1/3 inch thick slices. Place potatoes in a bowl, add chives, parsley, and capers.

  2. Combine vinegar, caper liquid and mustard in a small bowl. Whisk in oil. Season with salt and pepper. Pour dressing over potatoes. Can be made 2 hours ahead and be kept at room temperature.
