Med Salad

Ingredients

  • 1 cup cavatappi pasta
  • Romaine lettuce
  • 1 cucumber
  • 1 tomato
  • A handful of black olives
  • 1-2 tsp. sriracha hot sauce (depends on how spicy you want it)
  • 1/4 cup olive oil
  • 1/4 cup greek yogurt
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 garlic clove, minced
  • 1 tbsp. feta cheese, crumbled (for dressing)Salt & Pepper to taste

Directions

  1. Add your greek yogurt, olive oil, sriracha hot sauce, lemon zest, lemon juice, minced garlic, feta cheese (1 tbsp), and just a little salt and pepper to a food processor and blend until smooth. If you have an opening at the top of your food processor add the oil slowly while you blend.
