Polenta Bake

Ingredients

  • 1 tube polenta
  • 2 cans black beans (rinsed)
  • 1 jar corn salsa
  • Low-Fat Mexican cheese mix

Directions

  1. Slice polenta and place at bottom of baking dish

  2. cover with black beans

  3. pour salsa over beans

  4. sprinkle with cheese

  5. bake at 400 for 15 mins covered, 5 uncovered
