Loaded Baked Potato Soup

Ingredients

  • 1lb chopped bacon
  • 1 diced yellow onion
  • 1 diced carrot
  • 3/4c diced celery
  • 4 diced Russet potatoes
  • 4 diced red potatoes
  • 1/4c flour
  • 2c chicken broth
  • S&P
  • 4c heavy whipping cream
  • green onion
  • bacon
  • sour cream
  • shredded cheese

Directions

  1. Cook the bacon in a large soup pot. Remove, drain. Reserve half.

  2. Cook onion through celery for 10 min in oil. Add potato, cook 8 min. Whisk in flour and cook on low for 5 min. Add broth, half the bacon, and season.

  3. Simmer on medium high for 25 min. Mash some of the potato. Add cream and simmer for 5 min.

  4. Add more broth if too thick.

  5. Season & garnish.
