Ingredients
- 20 oz cheese tortellini
- 2 tbsp oliv eoil
- salt
- 8 oz baby spinach
- 1/4 minced red onion
- 14 oz marinated artichoke hearts
- 2 minced garlic cloves
- 2 tbsp red wine vinegar
- 1 zested lemon
- 1/4c olive oil
- 1 tbsp fresh thyme
- pepper
- 1/2c sundried tomato
- 1/4c goat cheese or feta (crumbled)
Directions

Cook the tortellini 5 min in salted water.

Drain, cool on cookie sheet and refrigerate until needed.

In a large bowl, toss spinach, onion, artichokes.

Mince the garlic and mash into a paste. Add to bowl with vinegar through thyme & pepper. Whisk.

Mix with remaining, toss.

Refrigerate and serve.
