Ingredients
- 1/2 lb smoked bacon, chopped
- 1 diced onion
- 2 diced celery stalks
- 3 diced jalapenos
- 2 chopped garlic cloves
- 1 tsp thyme
- 2 tbsp butter
- 1/4c flour
- 1 bottle Ale
- 2c chicken broth
- 1/2c heavy cream
- 1 tsp dijon
- 1 tbsp worcestershire
- 2c cheddar
- S&P
- cayenne
Directions

Cook bacon, remove.

Same pan- add onion, celery & jalapeno- 10 min. Add garlic & thyme- 1min.

Add butter, stir until bubbly. Sprinkle flour, cook 2 min.

Add ale, broth & bacon- 10 min. Add cream through cheese, stir until cheese is melted.

Season & garnish.
