Balsamic Green Bean Salad

Ingredients

  • 2lb fresh green beans cut into 1.5 inch pieces
  • 1/4c olive oil
  • 3 tbsp lemon juice
  • 3 tbsp balsamic vinegar
  • 1/4 tsp each- salt, garlic powder, mustard
  • 1/8 tsp pepper
  • 1 chopped red onion
  • 4c halved cherry tomatoes
  • 4oz crumbled feta or goat cheese

Directions

  1. Cook green beans, covered, in boiling water. Cook 10 min. Drain, place in ice water. Drain/pat dry.

  2. Whisk oil through pepper. Drizzle over beans. Add onion, toss to coat. Cover & refrigerate 1 hour.

  3. Prior to serving, stir in tomato and feta.
