Ingredients
- 2lb fresh green beans cut into 1.5 inch pieces
- 1/4c olive oil
- 3 tbsp lemon juice
- 3 tbsp balsamic vinegar
- 1/4 tsp each- salt, garlic powder, mustard
- 1/8 tsp pepper
- 1 chopped red onion
- 4c halved cherry tomatoes
- 4oz crumbled feta or goat cheese
Directions

Cook green beans, covered, in boiling water. Cook 10 min. Drain, place in ice water. Drain/pat dry.

Whisk oil through pepper. Drizzle over beans. Add onion, toss to coat. Cover & refrigerate 1 hour.

Prior to serving, stir in tomato and feta.
