Breakfast Tortilla Wrap

Ingredients

  • 1 slice Canadian-style bacon, chopped
  • 1 teaspoon extra-virgin olive oil
  • 2 tablespoons chopped green bell pepper
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon crushed red pepper (optional)
  • 2 slightly beaten egg whites
  • 2 tablespoons chopped tomato
  • Hot pepper sauce
  • 8-inch whole wheat flour tortilla, warmed

Directions

  1. In a medium nonstick skillet cook Candian-style bacon just until starting to brown. Add olive oil; heat. Add bell pepper, cumin, kosher salt, and, if desired, crushed red pepper. Cook for 3 minutes. Add egg whites; cook for 2 minutes. Stir in tomato and, if desired, hot pepper sauce. Spoon onto tortilla and roll up.
