Cheesy Leek, Sweet Potato and Cauliflower Puree

Ingredients
- 1 tbsp butter
- 1/4 cup leeks
- 1 sweet potato, peeled and cut into chunks
- 1 cup boiling water
- 3/4 cup cauliflower florets
- 3 tbsp grated cheddar
Directions

Heat the butter in a pan and add the leek; saute for about 3 minutes or until softened.

Add the sweet potato and boiling water and cook for 5 minutes.

Add the cauliflower and cook for 5 more minutes.

Strain the vegetables, reserving the cooking liquid.

Puree the vegetables with about 1/3 cup of the reserved cooking liquid and the grated cheese.
