Lentil and Vegetable Puree

Serves 8 people

Ingredients

  • 2 tbsp butter
  • 1 1/2 cups leeks, washed and finely chopped
  • 1/4 cup celery, chopped
  • 1 cup carrots, peeled and chopped
  • 1/3 cup red lentils
  • 2 cups sweet potatoes, peeled and chopped
  • 2 cups unsalted vegetable or chicken stock or water

Directions

  1. Melt the butter in a saucepan, add the leeks and saute for 2-3 minutes.

  2. Stir in celery, carrots and lentils and cook for 2 minutes more.

  3. Add the sweet potatoes and bay leaf; cover with stock or water.

  4. Bring to a boil, then reduce heat, cover and simmer for about 30 minutes or until the vegetables and lentils are tender.

  5. Remove the bay leaf.

  6. Blend to a puree or serve as is to older babies.
