Lentil and Vegetable Puree

Ingredients
- 2 tbsp butter
- 1 1/2 cups leeks, washed and finely chopped
- 1/4 cup celery, chopped
- 1 cup carrots, peeled and chopped
- 1/3 cup red lentils
- 2 cups sweet potatoes, peeled and chopped
- 2 cups unsalted vegetable or chicken stock or water
Directions

Melt the butter in a saucepan, add the leeks and saute for 2-3 minutes.

Stir in celery, carrots and lentils and cook for 2 minutes more.

Add the sweet potatoes and bay leaf; cover with stock or water.

Bring to a boil, then reduce heat, cover and simmer for about 30 minutes or until the vegetables and lentils are tender.

Remove the bay leaf.

Blend to a puree or serve as is to older babies.
