Fish with Cheese Sauce and Broccoli

Ingredients
- 125 gram flounder or sole fillet, skinned
- 3 peppercorns
- 1 bay leaf
- sprig of parsley
- 2/3 cup milk
- 1 1/2 cups broccoli florets
- 2 tbsp butter
- 1 tbsp flour
- 1/3 cup grated cheddar or Edam
Directions

Put the fish in a pan with the peppercorns, herbs and milk.

Bring to a boil, then simmer, covered, for about 3 minutes or until the fish flakes easily.

Strain the milk and reserve.

Discard the flavourings.

Flake the fish with a fork, checking carefully for bones.

Meanwhile, steam the broccoli for about 5 minutes or until tender.

Melt the butter in a saucepan, stir in the flour and cook over a gentle heat for 1 minute.

Gradually add the reserved milk, bring to a boil and cook, stirring until thickened.

Remove the sauce from the heat and add the cheese, stirring until melted.

Puree the fish with the broccoli and cheese sauce.
