Mediterranean Roasted Chicken

Ingredients

  • 1 5lb whole chicken with skin and bones
  • 2 tbs minced garlic
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbs seven spices
  • 1 tsp cinnamon
  • 1 tsp ground coriander seeds
  • 2 tbs paprika
  • 1/4 cup olive oil
  • fresh rosemary
  • fresh thyme
  • 10 inches string
  • 1 whole onion cut into 4
  • 2 carrots cut up
  • 2 whole potatoes cut up
  • 4 cloves garlic
  • 1/2 lemon

Directions

  1. Preheat oven to 450 degrees. Make sure chicken is clean and patted dry with a paper towel. In a small bowl mix 1tsp of the salt, black pepper, seven spices, cinnamon, coriander, paprika, minced garlic and olive oil. Next, sprinkle chicken and inside of chicken with 1 tsp of salt, then rub the spice paste all over chicken. Stuff the chicken with the ½ lemon, rosemary, thyme and garlic cloves, put carrots, onions and potatoes around and in chicken for roasting. Next, tie the chicken legs with the string. Put chicken in oven and roast for 15 minutes at 450 degrees and then turn oven down to 400 and then bake for another 40 minutes. Let chicken rest for 10 minutes before serving so that the juices do not run out of the chicken. Serve with roasted vegetables and garlic sauce.
