Brownies (Big Batch)

Serves 50 people

Ingredients

  • 2# butter
  • 2# chocolate chips (5-1/4 cups)
  • 12 ounce unsweetened baking chocolate (12- 1ounce. squares)
  • ...melt in large pot and let cool.
  • 12 large eggs
  • 6T. instant espresso
  • 4T. vanilla
  • 4-1/2 cups sugar
  • ....combine in a bowl until well mixed. Add to cooled chocolate.
  • 2 cups flour
  • 2T. baking powder
  • 2teaspoon sea salt
  • ....sift and fold into chocolate mixture.
  • 1/2 cup flour
  • 1-1/2# chocolate chips
  • ....mix to coat chips (so the don't sink) fold into batter.

Directions

  2. 350* 10 minutes/ rotate 10 minutes more and check for doneness

  3. Place batter evenly between to parchment lined (and sprayed) half sheet pans.

  4. Try to distribute evenly with out having to spread. (let it flow naturally)

  5. The less handling of batter the better.

  6. DO NOT OVER MIX or over bake.

  7. Brownies should be set but soft.

  8. DO NOT POKE WITH TOOTHPICK.
