Fish with Carrots and Orange Juice

Serves 6 people

Ingredients

  • 3/4 cup carrots, peeled and sliced
  • 3/4 cup potatoes, peeled and chopped
  • 250 grams sole, cod or flounder fillets
  • juice of 1 orange
  • 1/2 cup mild cheddar, grated
  • pat of butter

Directions

  1. eheat oven to 350.

  2. Steam carrots and potatoes together until soft.

  3. Meanwhile, place the fish in a gratin dish, add orange juice, sprinkle with cheese and dot with butter.

  4. Cover with foil and cook for about 20 minutes.

  5. Flake the fish with a fork, checking carefully for bones.

  6. Add the vegetables to the fish and its juices, then blend to the desired consistency.
