Fish with Carrots and Orange Juice

Ingredients
- 3/4 cup carrots, peeled and sliced
- 3/4 cup potatoes, peeled and chopped
- 250 grams sole, cod or flounder fillets
- juice of 1 orange
- 1/2 cup mild cheddar, grated
- pat of butter
Directions

eheat oven to 350.

Steam carrots and potatoes together until soft.

Meanwhile, place the fish in a gratin dish, add orange juice, sprinkle with cheese and dot with butter.

Cover with foil and cook for about 20 minutes.

Flake the fish with a fork, checking carefully for bones.

Add the vegetables to the fish and its juices, then blend to the desired consistency.
