Cantaloupe and Mozzarella with Prosciutto and Basil

Ingredients

  • 1 Cantaloupe, halved and seeded
  • 1/4 lb bite-sized mozzarella balls
  • 2 Tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Coarse salt and black pepper
  • 1/3 lb Prosciutto
  • 1/4 cup fresh basil, torn

Directions

  1. With a large melon baller, scoop melon flesh into a large bowl. Add mozzarella, oil, and red pepper flakes; season with salt and pepper and stir to combine.

  2. Arrange Prosciutto along the edges of a large serving platter. Stir basil into melon mix, transfer to center of platter to serve.
