Ingredients
- 2 3.5-oz salmon fillets
- 1/2 cup water
- 1/2 cup white wine
- 1/2 shallot, sliced
- 4 basil leaves
- lemon zest, to taste
- 10 peppercorns
- large pinch sea salt
- 1 Tbsp olive oil
- 5 cherry tomatoes, quartered
- 1/2 avocado, diced
- 1 Tbsp cilantro, chopped
- juice of 1 lemon
- pinch cayenne
- 1/2 tsp pink peppercorns, crushed with knife

Poach the salmon; put fillets in saucepan with white win, shallot, basil, lemon zest, peppercorns, and salt. Turn heat on low until mixture simmers. Set timer for 3 minutes and test for doneness. Remove the salmon and let cool.

Flake the salmon with a fork and mix it in a medium bowl with olive oil, cherry tomatoes, avocado, cilantro, lemon juice, cayenne, and peppercorns. Taste for seasonings and refrigerate 1 hour before serving.
