Ingredients
- 2 cups cooked chicken, diced
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup sliced roasted red bell peppers (from a jar)
- 1 can 4.5 oz chopped green chiles
- 1 cup sour cream
- 1 can red enchilada sauce
- 1 can green enchilada sauce
- 1 can drained and rinsed black beans
- Flour tortillas
- 1 1/2 cups shredded cheddar cheese
- Optional Mexican seasoning for chicken:
- Dry onion
- garlic
- cumen
- red pepper flakes
- oregano
- cilantro
Directions

Heat oven to 350 degrees. Spray 9×13 pan with cooking spray. In medium bowl combine chicken, MJ cheese, roasted peppers, chiles, black beans, and sour cream. Mix well.

Spread about 2 tsp of both colors of enchilada sauce on each tortilla. Top with 1/2 cup chicken mixture. Roll up. Top enchilada with remaining enchilada sauce. Sprinkle with cheddar cheese. Cover with foil (sprayed with cooking spray).

Bake 45-60 mins or until heated through. Serve with lettuce, tomato, avocado, sour cream, or salsa.
