Sausage & Pepper Baked Ziti

Ingredients

  • 1 lb sweet and/or hot Italian sausage (castings removed and crumbled)
  • 4 cloves garlic, minced
  • 2 lg green or colored peppers, sliced
  • 1 jumbo onion, sliced
  • 1 lbs sliced white mushrooms
  • 1 can (28 oz) whole tomatoes in puree
  • 1 can (15 oz) tomato puree
  • salt
  • 1 lb ziti or penne pasta
  • 1 pkg (8 oz) shredded Mozzarella cheese
  • 1/2 cup freshly grated Romano cheese

Directions

  1. Cook sausage and transfer to medium bowl. In sausage pan, cook garlic, peppers, onions and mushrooms for about 10 minutes, covered. Uncover and cook for another 8 mins. Stir in tomatoes and puree, salt. Heat to boiling and break tomatoes. Reduce heat to med-low, cover and cook sauce 10 mins. Cook pasta according to package but 2 mins less. Preheat oven to 400 degrees. Drain pasta but reserve 1/2 cup of pasta water. Mix pasta, reserved water, and tomatoes. Add mozzarella and stir. Place in one 9×13 or two 9×9 pans. Bake for 20-25 mins in oven.
