Chicken Curry with Apple

Ingredients
- 1 tbsp vegetable oil
- 1 small onion, peeled and chopped
- 1 garlic clove, peeled and crushed
- 2 chicken breasts, skinned and cut into chunks
- 1 cup button mushrooms, quartered
- 1 tbsp curry paste
- 1 tsp tomato puree
- 3/4 cup evaporated milk
- 1 apple, peeled, cored and diced
- 2 tbsp raisins
- salt and pepper
- 1 tsp lemon juice
Directions

Heat the vegetable oil in a medium saucepan.

Add the onion and garlic and cook for 5 minutes or until softened.

Stir in the chicken and the mushroos and cook for 3-4 minutes, until the chicken is opaque.

Stir in the curry paste and tomato puree and continue to cook for about 6 minutes, stirring throughout.

Stir in the evaporated milk, apple, and raisins and cook for 10 minutes, stirring occasionally.

Season with salt and pepper and stir in the lemon juice.
