Pork Rind French Toast Cakes

- 1-1/2 oz pork rinds, crushed (approx 3/4 cup)
- 2 tbsp flax meal or wheat germ
- 2 eggs
- 1/4 cup heavy cream
- 2 tbsp water
- 1/2 tsp vanilla
- 3/4 tsp cinnamon
