BLACK BEANSRICE CUBAN STYLE

Ingredients

  • 1 1/2 c. black beans
  • 4 slices bacon, chopped & fried
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 1 tsp. chili powder
  • Salt & cayenne pepper
  • Meat stock or broth
  • 2 c. cooked rice

Directions

  1. Wash beans, cover with 5 cups water. Soak overnight (or bring to boil, boil 2 minutes, cover and let stand 1 hour). Boil beans in salted water until tender. Drain. Add bacon, garlic and onion. Season with chili powder, salt, cayenne. Add broth to cover beans and simmer until beans fall apart. A little and make thick sauce. Pour over rice.
