Cheesy Meatloaf

Good with a side of mashed potatoes!

Serves 4 people

Ingredients

  • 1.5-2 lbs ground turkey
  • 1/2-3/4 bread crumbs (use white bakery bread, without HFCS, corn syrup, honey or molasses on ingredient label)
  • 1/4 cup milk
  • 1 egg
  • 1.2 tsp. dry mustard
  • salt and pepper to taste
  • 1/3 cup chopped green onions (green parts only)
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees.

  2. Mix together, by hand, all ingredients except cheese. Add enough bread crumbs to hold mixture together, depending on amount of meat you use.

  3. Place a piece of plastic wrap or coated freezer wrap on a clean, flat surface. Flatten meat mixture into a square that is about 10 inches in diameter and 1/2-3/4 inches thick. Sprinkle cheese evenly on meat. Roll up and place seam side down in baking dish.

  4. Bake about 45 minutes until cheese starts to ooze out ends and temp is 160 degrees.
