Crispy Potato Chicken

Ingredients

  • 1 tbsp. grated Parmesan cheese
  • 1 tsp. paprika
  • 1 tsp. garlic salt
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 broiler/fryer chicken (3.5-4 lb) cut up an d skin removed
  • 2 eggs
  • 2 tbsp. water
  • 1.5 cups mashed potato flakes
  • 1/2 cup butter or margarine, melted

Directions

  1. In a large ziplock bag, combine first five ingredients.

  2. Add the chicken in two batches; shake to coat.

  3. In a shallow bowl, beat eggs with water. Dip chicken in egg mixture.

  4. Coat with potato flakes. Pour butter into 13X9X2 inch baking dish; add chicken.

  5. Bake, uncovered, at 375 degrees for 30 minutes. Turn chicken, bake for 30 minutes longer or until juices run clear.
