Crispy Potato Chicken

Ingredients
- 1 tbsp. grated Parmesan cheese
- 1 tsp. paprika
- 1 tsp. garlic salt
- 1 tsp. salt
- 1 tsp. pepper
- 1 broiler/fryer chicken (3.5-4 lb) cut up an d skin removed
- 2 eggs
- 2 tbsp. water
- 1.5 cups mashed potato flakes
- 1/2 cup butter or margarine, melted

In a large ziplock bag, combine first five ingredients.

Add the chicken in two batches; shake to coat.

In a shallow bowl, beat eggs with water. Dip chicken in egg mixture.

Coat with potato flakes. Pour butter into 13X9X2 inch baking dish; add chicken.

Bake, uncovered, at 375 degrees for 30 minutes. Turn chicken, bake for 30 minutes longer or until juices run clear.
