Southwest Taco Pie

Ingredients
- 1 pie crust
- 1 Tbs. canola oil
- 1 lb. ground turkey breast
- 1 1.25 oz pkg. taco seasoning mix
- 1/2 cup water
- 1 cup black beans, rinsed and drained
- 1 cup drained canned whole-kernel corn
- 1 cup shredded cheddar cheese
- 2 tomatoes, chopped
- 1 cup shredded lettuce
- 2 green onions, thinly sliced
- 1/2 cup sour cream

eheat oven to 375.

Line a 9" pie plate with the dough, tucking the overhanging dough under to form a thicker edge; flute the edge. Prick the dough lining the bottom of the pie plate with a fork to prevent bubbling during baking.

Bake 15 min., or until crust is lightly browned and is set and dry.

Heat the oil in a large skillet over med-high heat. Add the ground turkey and cook until browned.

Stir in taco seasoning and 1/2 cup water.

Cook and stir for 3-5 min. or until water has evaporated.

Fill the baked pie shell with the turkey mixture, followed by layers of beans, corn, and cheese.

Bake pie 12 to 15 min., or until cheese is melted and filling is heated through.

Slice pie into wedges and top pieces with a sprinkling of tomatoes and lettuce. Garnish with green onions and sour cream.
