Carrot Cake

Ingredients

  • 4 beaten eggs
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 3 cups finely shredded carrots (lightly packed)
  • 3/4 cup cooking oil

Directions

  1. Allow eggs to stand at room temp. for 30 min.

  2. Meanwhile, grease and flour 2 9" round cake pans; set pans aside.

  3. In a large mixing bowl stir together flour, sugar, baking powder, cinnamon, and baking soda.

  4. In a medium bowl, combine eggs, carrots, and oil.

  5. Add egg mixture to flour mixture; stir until combined.

  6. Pour batter into prepared pans.

  7. Bake in a 350 oven for 30-35 min. until a wooden toothpick comes out clean.

  8. Cool on wire racks for 10 min.

  9. Remove from pans and cool completely.
