Coconut Lime Curry

Ingredients
- 1/2 cup chopped onions
- some olive oil
- 1 1/2 lbs. boneless chicken or pork, chunked
- 1-2 T. lime juice
- 2 t. red curry powder
- 1 t. garlic salt
- 1 t. ground ginger
- 1/2 t. coriander
- 1/4 t. turmeric
- 2 t. sugar
- 1/2 lb. potatoes, chunked
- 2 bell peppers, chopped
- 2 cups coconut milk
Directions

Sauté onions in a little olive oil on medium heat.

Add meat, stir well.

After 5 minutes, add lime juice, curry, garlic salt, ginger, coriander, turmeric, and sugar.

Then add the peppers and potatoes, stir and cook for about 5 minutes.

Add coconut milk, simmer for 15 minutes.

Serve over rice.
